Founded in 1971, the current second generation proprietress, Inada Mizuho, warmly welcomes guests. The interior also has private baths filled with water from Okudogo Onsen, famous for its skin-beautifying properties. Your feast at Sendan begins with a soak in this famous hot spring to sooth the fatigue of your journey. We have prepared plans that allows you to experience the warm hospitality of the proprietress, the famous hot springs of Ehime, Sendan's popular Japanese cuisine that reflects the local climate, and the traditional culture that has been passed down in this area.

- A ryotei, a traditional restaurant, is a high-end restaurant where you can experience a comprehensive art that brings together Japanese beauty and artisanal skills, including authentic Japanese cuisine, architecture, hospitality, and traditional culture. We will introduce you to the charms of the restaurants in the seven Setouchi prefectures by dividing them into "seven graces," and take you on a journey through their profound world.

1 The Grace of Cuisine
Ehime Prefecture is blessed with ingredients throughout the year, including fresh fish from the Seto Inland Sea, Japanese beef, citrus fruits, and vegetables. The local cuisine includes traditional seasonal dishes such as the Fukiyosemori appetizer (only available in autumn), which uses seasonal ingredients and is presented in a way that represents fallen leaves blown by the autumn wind, and a basket-shaped dish that resembles grilled salted sweetfish and the dancing fireflies. These meals are presented in creative expressions every year. You can also enjoy the exquisite tableware that brings out the best in your food.

2 The Grace of Architecture
Located along the clear waters of the Ishite River is a stately Japanese house built by skilled carpenters. The warm space is filled with wood, and the carefully crafted design of the alcove pillars, transoms, and snow-viewing shoji screens are sure to catch your eye. The private rooms are arranged around a Japanese garden where Nishikigoi carp swim, and each room offers a view of the garden's beauty throughout the years.

3 The Grace of Décor
The floor decorations, hanging scrolls, furnishings, seasonal flowers, etc., are all carefully arranged with the seasons, festivals and guests in mind. The works of Matsuyama-based calligrapher Matsushita Kotoshu are particularly impressive. There is also a written excerpt from Botchan, a novel set in Matsuyama by one of Japan's greatest writers, Natsume Soseki, which will make your trip to Matsuyama even more moving.

The friendly personality of the proprietress is also a reason why Sendan continues to be loved. Geisha from Matsuyama City are sometimes invited to liven up parties.

5 The Grace of Tradition
Due to its reputation for delicious food and hospitality, Sendan has become a popular venue for important events and milestones in life, such as weddings, engagement ceremonies, meetings, and banquets. In Japan, red is considered an auspicious color that represents longevity and prosperity. On happy occasions, toasts are made with red cups, which are traditionally used at celebratory occasions.

6 The Grace of Performance
Sendan has to date hosted performances of Matsuyama's traditional joruri puppet theatre, Iyo Gennojo, as part of "Plan A." Among the many performances, the highlight is the original story that uses a puppet of a nine-tailed fox, a famous monster legend from Ehime. We are also working to promote Matsuyama's traditional performing arts together with a preservation society.

Flower arrangement is one of the traditional arts of Japan. It is an art form in which seasonal branches and flowers are placed in a vase to express and appreciate their beauty and the preciousness of life. The third generation proprietress of Sendan has also studied flower arranging, and arranges flowers with great care. Please enjoy the changing seasonal atmosphere, which is so highly valued at Sendan, through flower arranging.
- Introducing Sendan
- Founded in 1971, the name "Sendan" comes from the Japanese proverb, "The sandalwood tree (sendan) is more fragrant than the new leaves." Sendan is a ryokan (Japanese inn) where you can not only dine but also stay overnight, and the inn has two private baths where you can fully enjoy the waters of Okudogo Onsen. The restaurant is renowned for its delicious Japanese cuisine, which uses an abundance of seasonal produce, including seafood and mountain delicacies nurtured by Ehime's lush natural environment. To date, the restaurant has boldly taken on new challenges while respecting Japanese aesthetics and traditions, such as overseeing in-flight meals for ANA's domestic premium class flights and developing new products including original sweets and Matsuyama souvenirs. Non-guests can also use the facility if they make a reservation. Enjoy a relaxing time that only Sendan can offer, savoring Ehime's famous hot springs, heartfelt hospitality that will leave a lasting memory of your trip, and seasonal kaiseki cuisine that reflects the rich local climate.
